The perfect accompaniment to a vegan roast (or simply a very moreish snack!)

INGREDIENTS
500g Brussels sprouts, trimmed and halved
2tbsp extra virgin olive oil
1 lemon, juice and zest of
1/2tsp chilli flakes
1/2tsp sea salt
1/2tsp freshly ground black pepper
50g vegan Parmesan, grated
METHOD
Preheat your oven to 220C
Add the oil, lemon zest, chilli and seasoning to a large baking tray and mix well by hand. Toss in the sprouts, give them a good coat and arrange cut-side down
Roast on the middle shelf for 15 mins then sprinkle over the Parmesan and cook for a further 10-15 minutes until the Brussels are tender and the cheese is nice and crisp
Transfer to a serving dish and squeeze over the lemon juice. Absolutely Delicious. Enjoy x
