Ingredients
- 4 veggie sausages, frozen
Merguez Sausage Rub
- 1tbsp olive oil
- 1tsp ground cumin
- 1tsp harissa
- 1tsp sumac
- ¼ tsp garlic salt
- dried chilli flakes, pinch of
Middle Eastern Couscous
- 75g couscous
- 1tbsp ground cumin
- 1tbsp Za’atar
- 1tbsp hot Paprika
- handful of flat parsley, rough chopped
- 2 dried sweet figs, rough chopped
- 2 dried soft apricots, rough chopped
- 2tbsp olive oil
- Pinch of salt
Mixed Leaf Salad
- ½ bag mixed leaf salad, rough chopped
- 1 salad tomato , rough chopped
- 1tbsp olive oil
- Salt and freshly ground pepper, to season
- Pine nuts, sprinkle of
Serve with hummus and a couple of pita breads cut into wedges
Method
- Preheat your grill to max and flick on the kettle
- Combine the Merguez Sausage Rub in a small bowl and apply to the sausages. Grill according to instructions (typically around 15 mins)
- While the sausages cook, make the couscous in a medium bowl according to instructions (around 5 mins)
- Combine the Mixed Leaf Salad ingredients in a medium bowl
- When the couscous is ready, add the remaining Middle Eastern Couscous ingredients and stir well to combine
- When the sausages are ready transfer to a chopping board and allow to cool a little before cutting into bite sized pieces. Stir into the couscous
- Either serve everything in separate dishes or combine into one dish. Either way, it’s absolutely delicious! Enjoy x
