15 min plant-based stew

What’s my secret ingredient for the perfect plant-based stew? White miso. It’s something else ✨

Serves | 4

INGREDIENTS

1tbsp extra virgin olive oil

2 green peppers, cored and roughly chopped

2 carrots, peel and thinly sliced

400g tin of chopped tomatoes

2tbsp tomato purée

500ml veg stock

1tbsp white miso

1x 400g tin of butter beans, drained

1tbsp oregano plus extra to garnish

1 bouquet garni

METHOD

Fry the peppers & carrots in oil for a couple of minutes. Add everything else and simmer for 10 minutes. Remove the bouquet garnish then serve with a sprinkling of oregano.
