Colourful summer salad

the weatherโ€™s looking hot in the UK โ˜€๏ธ so how about some cool salad ideas?… this is a lip-smackingly good vegan tricolore ๐ŸŒฑ ๐Ÿ˜‹

250g Rosa Verde Salad

1 ripe avocado, sliced into long strips

200g tofu, drained and cubed

250g cherry tomatoes, halved

Large handful of fresh basil leaves, rough chopped


Arrange a bed of salad leaves in a large salad bowl. Add the avocado evenly around the bowl and dot the tofu and tomatoes beside the avocado. Scatter over with basil, season and drizzle with some extra virgin olive oil…delish! I hope you enjoy x
