INGREDIENTS
1tbsp extra virgin olive oil
1 brown onion, diced
1 large carrot, cut into batons
1x 400g tin of chopped tomatoes
500ml low sodium vegetable stock
1x 400g tin of black beans, rinsed and drained
1tbsp ground cinammon
1tbsp smoked paprika
1tbsp ground cumin
2 bay leaves
Salt and pepper, to season
METHOD
Fry the onion and carrot in the oil for 5 minutes then add everything and simmer for 15 minutes, stirring regularly. Discard the bay leaves and serve immediately. Enjoy my lovelies x
