INGREDIENTS
30g basil, leaves only
30g pine nuts, toasted
30g vegan cheese, grated
1/2 lemon, zest and juice of
Extra virgin olive oil
Salt and freshly ground black pepper, to taste
METHOD
Add all the ingredients to a food processor and pulse briefly to a paste with some texture. Stir through cooked pasta or cannellini beans for a mouthwatering meal. Absolutely delicious – enjoy x
