whole roasted Harissa Cauliflower

a showstopper for your taste buds (and its so easy!…)

Serves | 4

INGREDIENTS

1 whole cauliflower, leaves trimmed

5tbsp harissa spice

2 garlic cloves minced

2tbsp extra virgin olive oil

1 lemon, juice of

Salt and freshly ground black pepper, to season

METHOD

Preheat the oven to 200C

Add the ingredients to a roasting tin and mix well to combine. Make sure the cauliflower is well-covered. Roast for 45 minutes to an hour until the cauliflower’s tender with some char. Turn over halfway through and baste with the lovely juices

Serve warm alongside a simple green salad and roast potatoes or with couscous, grilled red peppers and tomatoes. Either way, it’s absolutely delicious. Enjoy x
