INGREDIENTS
400g bread flour
375ml warm water
1 sachet of dried yeast (around 7g)
1tsp sea salt
100g mixed seeds (optional)
METHOD
In a large mixing bowl combine the flour, yeast, seeds and salt. Add the water and stir with a wooden spoon to bring the dough together (but don’t overstir). Cover with a tea towel and rest for 2-3 hours at room temp. It should have doubled in size. Transfer to a large well-floured chopping board and make three slits across the top and rest uncovered for 45 minutes. Preheat your oven to 230C, add a baking tray to the middle shelf and an ovenproof bowl filled with water underneath (this’ll create the steam to make the crust)
After the 45 mins is up, carefully take out the baking tray, sprinkle with flour and transfer the dough onto it. Cook for 30 mins or until it’s golden brown and sounds hollow when tapped underneath. Allow to cool before slicing
This sugar-free method creates a rustic flat bread that works brilliantly for grilled vegan cheese sandwiches, as part of a ploughman’s lunch or simply to mop sauces. Absolutely Delicious! Enjoy x
