Vegan caramelised Red onion chutney with no added refined sugar

With no added refined sugar but all the flavour, treat yourself with this healthy condiment: the perfect accompaniment to a grilled vegan cheese sandwich 😋

INGREDIENTS

3 red onions, diced

1tbsp olive oil plus 1tbsp extra

100g equivalent of sugar from a plant-based natural substitute

75ml red wine vinegar (vegan option)

1.5tbsp balsamic vinegar

1 garlic clove, minced

1tsp mustard (vegan option)

1/2 tsp paprika

Low sodium salt, pinch of

METHOD

Heat 1tbsp of the oil in a deep saucepan then add the onions and 1tbsp of sugar and give the pan a good stir. Turn the heat to low and cook the onion nice and slow (the secret to a good chutney) for 30 mins stirring regularly to avoid the onion sticking (add more oil if necessary). The onion should have reduced in half and be soft but not browned

Add another 1tbsp of sugar, stir well and cook for a further 5 minutes stirring occasionally. Add the remaining ingredients and cook for a further 30 minutes, again stirring occasionally to avoid sticking. It should now be thick in consistency and dark caramel in colour. The chutney is ready when it takes a few seconds for the juices to return after a wooden spoon is dragged across the bottom of the pan. Absolutely Delicious. Enjoy x
