With no added refined sugar but all the flavour, treat yourself to these healthy vegan cookies…

INGREDIENTS
315g plain flour
1tsp baking soda
1tsp baking powder
1/2tsp salt
315g peanut butter
50g coconut oil
4tbsp oat milk
Egg Replacer for 3 eggs (follow packet instructions)
2tsp vanilla essence
100g sultanas, finely chopped
100g vegan chocolate chips
METHOD
Line a baking sheet with parchment
Preheat your oven to 180C
In a large bowl whisk the flour, baking soda, baking powder and salt
In a large heatproof bowl melt the peanut butter in the microwave until loose. Gradually whisk in the other wet ingredients – coconut oil, oat milk, egg replacer and vanilla essence. Stir in the sultanas and vegan chocolate chips
Create a well in the flour and gradually stir in the peanut butter mix. The mix will get thick after a while so use your hands to bring together the cookie dough
Transfer the dough to the baking sheet and pat down to 1cm thickness
Bake for 12 minutes or until golden brown. Cool on a wire rack for 5 minutes before eating. Absolutely Delicious. Enjoy x
