Spicy Leek Potato & Bean Vegan Stew

A comforting vegan one-pot recipe that’s easy to make

INGREDIENTS

1tbsp extra virgin olive oil

2 large leeks, thinly sliced, white bits only

2 large potatoes, cubed

1x 400g tin of butter beans

1x 400g tin of chopped tomatoes

2tbsp smoked paprika

Garnish:

2 spring onions, sliced on the diagonal

1tbsp za’atar

METHOD

Heat the oil in a large frying pan. Add the leeks and fry for 5 minutes or until softened. Add everything else and simmer for 20 minutes or until the potatoes are ready. Dish up with a sprinkling of spring onion and za’atar. Absolutely Delicious. Enjoy x
