Mindfulness Factor: East-meets-West with this refreshingly hot and spicy dish. It’s keto-friendly too!

Ingredients
Lemony Broccoli
- 1 small head of broccoli, cut in to florets
- ½ lemon, zest and juice of
- Salt and freshly ground pepper, to taste
Dirty sauce (1 portion)
- 3tbsp sriracha (or 1/2tsp chili flakes as a Keto substitute)
- 3tbsp low sodium soy sauce
- 2tsp sesame oil
Spicy Salmon
- 2 salmon fillets
- 1 portion of Dirty Sauce (see above)
- Salt and freshly ground pepper, to taste
Dirty Rice
- 150g of uncooked rice (or Keto substitute like Cauliflower or Chickpea rice)
- 2tbsp coconut oil
- 1 garlic clove, minced
- 1tsp ginger, minced
- 2 spring onions, thinly sliced (white and green parts)
- 1 portion of Dirty Sauce (see above)
- Salt and freshly ground pepper, to taste
Method
- Preheat your grill
- Add your Lemony Broccoli ingredients to a small bowl and toss to coat. Set aside for 10 minutes
- Prep your Dirty Sauce: combine the ingredients in small dish and set aside. You’ll need two portions for this meal
- Pat dry the salmon with kitchen roll then liberally rub with Dirty Sauce and sprinkle with salt and pepper. Cook skin-side down on the grill for 15-20 minutes or until it’s ready
- After 8 minutes, start the Dirty Rice by cooking the rice according to packet instructions (around 10-12 minutes)
- At the 10 minute mark, add your broccoli to the grill
- A couple of minutes before the salmon’s ready, finish your Dirty Rice: heat a wok or skillet over medium-high heat then add the oil and swirl. Once hot, add the ginger, garlic and spring onions (white parts only) and cook for around 30 seconds. Toss in the drained and cooked rice and break up any clumps with a wooden spoon. Stir fry until the rice turns golden (around 2 minutes). Stir in the sriracha, soy and sesame oil. Add salt and pepper to taste
- Transfer the rice into serving bowls, top with the salmon and scatter over with broccoli and spring onion greens
