
Mindfulness factor: the ultimate healthy mid-week meal – ready from scratch in 10 minutes

Ingredients
- 200g tofu, cut into cubes
- 2tbsp coconut oil
- 1 garlic clove, minced
- 2cm cube of ginger, minced
- 4tbsp teriyaki sauce mixed with 2tbsp water (bottled teriyaki is thick and sticky, but traditionally it’s a thin sauce) *
- 12 broccoli sprigs, halved
- 12 baby sweetcorn, sliced in half #
- Large handful of mange-tout
- 3 spring onions, finely sliced
- small handful of coriander, rough-chopped
- 2tbsp light soy sauce
- 300g ‘instant’ low carb egg noodles
Garnish
- 1 spring onion, finely sliced
- small handful of cashews, rough-chopped #
- small handful of coriander, rough-chopped
* use homemade version or substitute with chili flakes and more soy sauce to make this keto-friendly

Method
- wrap the tofu in kitchen paper to dry then cut into cubes
- melt the coconut oil in a large pan on high-heat then add all the ingredients, starting with the garlic and ginger as they only take 30 seconds to cook, give everything a good stir and cook for 5 minutes with the pan lid on
- plate up and sprinkle over with garnish
